crujiente - adjective - crunchy. Look up crujiente in the dictionary (http://www.tomisimo.org/dictionary/spanish_english/crujiente)

Si las papas no son crujientes, no son buenas.
If the chips aren't crunchy, they aren't good.

Over here we would say: Si las patatas no están crujientes no son buenas. But I love the way your sentence sounds. Just pointing out the difference.:)

Yes, you're right. I knew about the papas - patatas difference, but now you made me wonder if I should have used estar instead of ser. :(
