“Es que aquí en España se come mucha carne y pescado.”

¿Hay que decir ‘mucho pescado’?

"mucha carne y mucho pescado" is to be expected, but it is also OK in its original form, though it wouldn't be formal.

"mucha carne y pescado" is parsed as "mucha [cantidad de] carne y pescado", especially in informal speaking, but it's a tinsy bit ambiguous as it all depends in how it is pronounced. A pause of a tenth of a second can make it sound like it means "a lot of meat, and also fish". Spanish hates redundancy, but it hates ambiguity even more.
