Estar rico Vs Ser rico
 
El gazpacho es muy rico.
• Gazpacho is very tasty. (in general)

El gazpacho está muy rico.
• The gazpacho is very tasty. (this particular gazpacho that you made tonight)

But I have heard the second form (‘está’) used to describe gazpacho ‘in general’, that it is, in fact, very tasty. Is this incorrect?

In casual language people make all kinds of mistakes.
In general is you say el gazpacho es muy bueno, you are problably referring to the soup's general qualities.
If someone prepares an very good batch, most correctly you would use the verb estar.
