What is the difference between "griego" and "Greco" (Greek)?

"Griego" is a noun & adjective meaning "Greek".

"Greco" as an independent word is speficially:
1. the name of the son of Zeus and Pandora II whose name became associated with a particular Hellenic tribe (the Greeks).
2. the name of a Spanish-Greek artist ("El Greco")
3. the name, in Spanish, of 2 varieties of grape

Otherwise, "greco-" is a prefix meaning "Greek".
