Hongos is used (at least in Colombia) as something that grows in the grass. As well, we use that word for example when you have a kind of infection in your skin or in the food or in wooden objects. Summarising, they're not edible.
In the case of champiñón, it refers to the edible kind of hongos. In a figurative sense (again, at least here on Colombia) we use the expression "me quedé más solo que un champiñón" to mean that somebody feels lonely.
