When the next word after "o" starts with another "o" or with "ho", it is changed for "u", for euphonic reasons.

Yo no conozco a ningún bailes mexicanos tradicionales. También nunca he visto el Ballet Folklórico de algún un país de latinoamericano.
- "Conocer a" is used for people. "Conocer", when referred to things doesn't have preposition "a".
- "Ningún" is singular, and then you're using plural. "Ningunos" doesn't sound good here, so try changing everything to singular.
- "También nunca" don't fit together. It's either "nunca he visto" or "tampoco he visto".
- "Algún" is used in affirmative sentences. For negative sentences, "ningún" is the correct word.
- "Latinoamericano" is an adjective, not a place, so it's either "un país de Latinoamérica" or "un país latinoamericano".

Sé que ninguno de los bailes tradicionales mexicanos.
Nunca he visto el Ballet Folklórico de ningún un país latinoaméricano.

Los mexicanos celebran el cinco de mayo en mayo de sesiones(?). Es una celebración de la victoria del ejército mexicano sobre las fuerzas francesas en Puebla.
What do you mean to say in "en mayo de sesiones"?

I actually don't know! I think I was trying to say that Mexicans celebrate cinco de mayo on the fifth of may but that does not look right ...

"Su propio país" suggests a person's property.
You're celebrating when Canada became an autonomous country. Can you re-write your sentence?

En el lugar donde vivo, el Día de Canadá es el día en que celebramos cuando Canadá se convirtió en un país autónomo.
