You can also say: I prefer to double the water-or even better-I prefer to
double the amount of water.

In Spanish I would have said: prefiero doblar la cantidad de agua.
Does that sound strange?

Te entiendo, pero me parece un poco rebuscado. Yo no lo diría nunca así. "Poner el doble de agua", en todo caso. Tal vez sí lo diría en un experimento químico, ahora que pienso, pero no en una receta, que es lo que estoy escribiendo.

Yes, but perhaps not quite as exact as 'twice the amount'.

I think saying "I used twice as much water as he did" is a great way to say it. It would be the most common way to say it in the US. Obviously "twice the amount" is perfectly correct as well.
