Rusty, here in Tenerife the second expression would involve a bus or car. You would need to say ir de excursión a pie so the first is perhaps preferable.

Agreed. It's better if you specify how the excursion is performed. The dictionary lists it without the "vehicle."

I personally would tend to use 'ir de excursión' and the context would tell how is the "excursion" is performed.
Yo solía ir de excursión con mi padre a la montaña, cuando era niño... unos 20 o 25 km para un chaval de 8 o 9 años no estaba mal... (walking... una buena caminata) Mi padre nos llevaba de excursión a Montserrat (en autobús, pues estaba a más de 100 km) y allí hacíamos caminatas por los alrededores. Mi padre organizaba excursiones con los niños del Colegio, para visitar la Santa María en el puerto de Barcelona, y luego ir al museo marítimo de las Atarazanas, (o Les Dressanes). Aunque la distancia era de unos 30 km, íbamos en autobús, para aprovechar el día. I hope the examples help, otherwise, you can tell me to go hiking... (que me vaya a paseo...)

If hiking means walking in the countryside, from some years ago the word "senderismo" is used here. But, as others said, we can use "ir de excursión" or "ir de paseo", "ir a pasear", "ir a caminar".
"Hacer senderismo" sounds like practising a sport. Some people, including myself, consider that expression ridiculous. We just walk, don't need another word. But we are old-fashioned.
