Does this actually mean "The... don't do anything for me?" I'm doubting my text book when it comes to translations.

Hola, ... creo que "dejar a alguien frío / Quedar a alguien frío" significa "to leave someone speechless / suprized"

Esta pintura me queda / deja frío!
This painting leaves me speechless / surprized!

El hombre empezó a volar en el cielo como un pájaro y me dejó frío
The man started to fly like a bird and it left me speechless/surprized/without words/ect.

Allison me dijo la mala noticia y me quedó frío.
Allison told me the bad news and I was speechless (it left me speechless)

"Dejar frío" significa "dejar indiferente":

"Dejar helado" significa "sorprender"



Me dejan frío sus tonterías.

Cuando me dijo la verdad, me dejó helado.

It´a synonym of me deja indiferente, your translation is perfect, it doesn´t do anything for me.
Also, I was quite unmoved by them.

It could to meaning Me dejo sorprendido. At least you should to take in mind my counsel.
