Cómo se dice "I never pass up the chance to practice Spanish".

Only the last one has a conjugated verb, so it's the best of the three.
If you conjugate dejar in the second one, that'll work, too.
The first one doesn't have a conjugated verb and it has an unnecessary preposition after practicar, so forget that one.

In some regions "chance" is masculine, so you can also say "el chance de".
