Primero que nada creo que la palabra correcta es FELIZ y no FILIZ.

Segundo, yo diria........

-I love watching Rosa be happy!
-I enjoy watching Rosa be happy!

I [love/enjoy] watching Rosa [when/while] she's happy.

I suggest:

I love seeing Rosa happy.

or

I love it when Rosa is happy.

To me this conveys it better than the verb "watch."
