Hola Scott. ¿Qué tal? He enseñado español durante años a la escuela secundaria, la escuela media, la escuela primaria y en una escuela de adultos. I also have taught Italian to adults for the last 7 years. (Actually before that I taught Italian to first graders.) One of the big fun things I had the students do was sing in Spanish and Italian. Also I used the lyrics of Spanish and Italian songs as poems. The students would recite the lyrics of songs like poems in front of the class. Many of the students would also sing in Spanish and Italian in front of the class. Oh and some of the students would tell stories in Spanish/Italian in front of the class. We would put on shows and invite other classes to watch us. I even filmed and put the shows on DVD. Would be glad to help you out with this.
