Here, the mix of the phrases are conditions and very exact. So/Then, I dare say what the phrase are correct I'm sorry, I'm not quite sure what you mean with this last sentence. ¿Que son todas correctas?

Yes all the phrase are correct.

You can mix them when you want.

I'd say: "cuando estaba charlando con él, me pareció que..."

Cuando/Mientras estaba haciendo algo, sucedió tal cosa.

Si en lugar de subordinadas, usas coordinadas, me suena mejor:

Estuve muchos años viviendo en Roma y solía salir a cenar pizza los sábados.

Sin embargo: cuando estaba viviendo en Roma, solía salir a cenar pizza los sábados.

Pero cuando "Cuando estuve charlando-me parecía", cuanto más lo digo, menos me gusta.

Tal vez: Estuve charlando con él y me parecía que tenía razón.

Así me suena mejor
