How do I ask the question: Do you see yourself as a helper? I think this is correct. I need a little help with this. ¿Véase como un ayudante?

Is that a question or an order? (Hint: check the verb form).

The "un" looks excessive to me, but I'd want a second opinion on it.

A question is not being asked.
The article isn't needed.

"¿Te ves como un ayudante?"

I like that one. That sounds most natural in English.

Do you see yourself as a helper? = Se/te ve/ves (usted (mismo/misma)/tú (mismo/misma) como (un/una) ayudante

¿Véase como (un) ayudante? = See yourself as a helper.

Question: Would "Te consideras ayudante?" be different from "Te consideras dentista?"
No, no soy dentista (ayudante). Being an ayudante is less well defined compared to being a dentist, but I'm not sure how that does, or doesn't, affect the usage of the article.

Hopefully someone can clarify this for me. Thanks!

There's a difference. "Ayudante" is also an adjective. If you want to use it in this sentence as such, you don't use the article, as you wouldn't use it with any other adjective. But it doesn't sound right, as it's something we wouldn't say. That's the reason why if it's used as a noun, you must use the article.

Somehow "me considero dentista" sounds weird to me. I'd say "me considero un dentista".
