Arriesgarse, if you mean starting an endeavor you're unsure about.
Casarse, if you mean you're getting married.
Tirarse a la piscina (zambullirse), if you plan to get wet.

Aventarse is a fairly good translation for take the plunge, since it can be used both figuratively and literally.
