I said the wrong thing....
yesterday a girl asked me if i was going to a party and i said no sé si estaré asistiendo. today i realised i should have said no sé si yo asistiere al fiesta. what a stupid mistake. i could have even said no sé si yo fuere al fiesta.

Instead of trying to use the future subjunctive, which is mostly dead in modern Spanish, you could have used the present tense or the simple future tense (formed with ir a + infinitive) in the subjunctive mood.
No sé si asista a la fiesta. No sé si vaya a asistir a la fiesta. |

I'd use the simple future:
No sé si asistiré / iré. No sé si voy a asistir / ir. |

did i really say the wrong thing? (no sé si estaré asistiendo) because my intentions were to say i WON'T BE ATTENDING that's y I said no estaré asistiendo the gerund needed to be used (attending/asistiendo) so that's y i used the verb estar (estaré)

Gerund is not used in such sentences in Spanish. I'd say them with simple future:
No iré a la fiesta. No voy a ir a la fiesta. Creo que no iré a la fiesta (no voy a ir) Supongo que no iré a la fiesta. etc. You would use gerund, in this sentence, if something is going to happen at the same time: Estaré yendo a la fiesta cuando llegue el avión de Pablo. No estaré yendo a la fiesta cuando tú cojas el coche porque me estaré duchando. |
