Hi,

Cálzame las Alpargatas:

Caballero en su caballo,
Tiene Don Carlos, ay que primor,
La boina flotando al viento...


A Knight on his horse,
Don Carlos has, how elegant,
His beret blowing in the wind...


What is it? Perhaps, Oh, how fine he is!..

In case ay is merely an interjection.

I agree that Ay is an interjection, similar to Oh in this case.
