Translating "again"

When I looked again I realized that what I was seeing was actually an American bull

Cuando volví a mirar me di cuenta de que lo que yo miraba fue un toro Americano en realidad

Your use of "volver" is fine.

I would only change "fue" for "era", so it will agree with "yo miraba" / "yo estaba mirando". Also, for reasons of style, perhaps "estaba viendo" would sound better, to avoid repetition of the verb.

@Hernán: No sé si alguien más lo considere igual que tú, pero para mí, la noción de dar la vuelta con el propósito de mirar algo, tendría que ser pronominal, y usar la preposición para: "cuando me volví para mirar...".

Ah, perfecto. Entonces tendría que ser "cuando volví mi cabeza" por ejemplo para que esté bien.
