Quitar hierro

Dependiendo del contexto, sí. O podría significar que se le quita presión a algo o a alguien.

Para mi, quitar hierro al asunto quiere decir quitarle importancia a algo.

"quitar hierro"--> como se ha indicado, quitarle importancia a algo
como indica perikles, quizás tiene su origen en la construcción, a menos importante el edificio menos hierro lleva el hormigón

Correcto. En Chile por lo menos también lo usamos para "presión, fuerza" etc.

Como dijo Poli "menos valor" = "menos importancia" = downplay
