I'd like to express "my dad showed me how to fish when I was a kid".
My first thought is: "mi papa me enseño a pescar de niño" but I feel like it's missing something

A capital letter for "mi", the written accents for "papa" and "enseño", and the full stop. Other than that, your sentence is fine.
