Echo de menos siendo joven.
Me falta siendo joven.

Creo/Pienso que sean/son mas o menos lo mismo pero cuál es mejor y más
?????? ??????
comúnmente utilizado?

¿Son las diferencias sutiles?

Podría estar totalmente equivocado en todo.

As I recall:

Creo que son ... (because you are asserting that something is so)
No creo que sean ... (because you are asserting that something is NOT so)

I would also say that 'believe' is 'creer'. There are times in English when we use 'believe' and 'think' to mean exactly the same thing. The Spanish translation, in that case, is always 'creer'. The verb 'pensar' is used when mental thought is involved. Sometimes there is overlap (belief or hope, coupled with thought). In that case, either verb may be used in Spanish.

I wouldn't use a literal translation for "I miss being young." I'd say some thing like "¡Cómo quisiera ser joven otra vez!" or "¡Cómo quisiera volver a ser joven!"
