This is used, though not so much as a predicate adjective (subjective complement). It's used more commonly as an adjective.
It's the same as boquiabierto. Here is an example of its use as a subjective complement: John was open-mouthed (in awe/in shock) when he received the reward money. Here's an example of its use as an adjective. I stood in open-mouthed horror as I witnessed the accident. The last sentence could also be said: I stood gaping as I ...
