Italian, spanish
I found in a grammar book that nationality names like Spanish etc.. and the old etc... are nouns which are singular and plural can anybody set an exemple.

No,
You would use: one Spaniard/two Spaniards or one Spanish person/ two Spanish people

You can use "fish" that way, however. One fish, two fish, red fish, blue fish.
