How would I say "greens" as in salad or vegetables greens?

Welcome to the forum. Please clarify. Are you asking how to say salad greens in Spanish?

salad greens = verduras de hoja verde
vegetable greens = verduras verdes

There may be other words.

I'd say "ensalada verde".

"Verdura" (verdura-hoja verde) are always green vegetables (judías, guisantes, coliflor, acelgas, etc.). Vegetables which are not green are called "hortalizas" (pimientos, berenjenas, calabacín, calabaza, etc.). I don't know if it's the same in other countries.

In Mexico we call all of those "verduras". We use "hortaliza" usually only for the place where they're cultivated.
Some people lately call them "vegetales", but that's an influence from English, because a "vegetal" can be also non-edible plants.

Thanks, Angelica. It's good to know that vegetales in Spanish is not the same as vegetables in English in which the term applies to all edible leaves/fruits only.
