Yo hablo español y sé hablar inglés. Pero si supiera mucho inglés, diría "y hablo inglés". Aunque, bien pensado, no hay mucha diferencia, la verdad. También puedes decir "hablo español", aunque no lo hables muy bien.

"Castellano" creo que sólo se usa en España, pero tampoco lo sé seguro.

No te puedo ayudar mucho.

Both phrases are correct.

You speak Spanish.
Or I speak Spanish, they are accurate.

To me, they both can mean the same, but being a native Spanish speaker, I'd use "sé hablar español" to emphasize not only a correct but a really good use of language (pardon unmodesty).

Que yo sepa, también en Chile y Argentina, por lo menos. He conversado con mucho smexicanos que aunque ellos dicen que hablan español, entienden perfectamente cuando uno dice que habla castellano. Creo que así es en toda Sudamérica. En Filipinas todavía hay gente que dice que habla castellano.

I can speak English = Puedo hablar inglés - which I understand wouldn't be correct in Spanish?

You would say Sé hablar español = I know (how to) speak Spanish.

Just another occasion when interpretation is better than translation?

That sounds a bit stilted doesn´t it?

Not really.

Although I would actually say I can speak English or I speak English.
