Is this correct?

Aprendo español, porque queremos vivir en España cuando salgamos los Emiratos Árabes Unidos.

I want to say "I am learning Spanish because we want to live in Spain when we leave the UAE.

I am still not clear on when to use the Subjunctive mood but I had a feeling I should use it here with "salgamos" but I am not sure, nor am I sure if I used the correct tense

Any help is appreciated!

The verb salir is followed by the preposition de in this case. You can use the subjunctive mood if you want to convey the idea that leaving may not happen. If it will happen (if that's the plan), use the indicative tense.
No comma is needed in your sentence.

Present subjunctive is the right and only option there, as it is an adverbial clause involving time and it's not a part of reality -which includes present and past-. The use of the adverb "cuando" prevents thinking that action as being not possible and uncertain -in spite your plans may change, this is certain for the sake of the sentence-.

Anyway, "salir" is not the verb as the Emirates are big enough, open, airy, and you can't tell the physical characteristics that determine that you are leaving it and entering Saudi Arabia or Oman (like in "salir de la ciudad" or "salir del bosque") ; you should use "irse": "cuando nos vayamos de los Emiratos" or eventually "dejar" or "abandonar" -which convey the notion of saying sayonara for good-.

"Salir" is expressive enough, as being in a country implies being inside its political and administrative boundaries anyone would understand.

vivir en España cuando salgamos del submarino... (and pretty forced here)

"vivir ... cuando .... salir" suggests we don't live in the place we are leaving (only the previous examples overcome such suggestion); but we may be travelling and we "salimos de" countries as we are sort of "in transit".

Using "salir" in Spanish suggests the sentence is something like along the lines of "I'm gonna live in Spain when I leave the tavern - Barney Gumble".
