I think that bride is used when the woman is going to get married. I think this saying is used above all for girl friend or fiancée.

Aha ok so it' s basically to 'snatch someone' s girlfriend away', to steal someone else' s girlfriend (or fiancée) ?

Is this saying also used for 'novio' , i.e. to steal someone's boyfriend ?

Yes, it's used also for "novio":

La rubia ésa me ha levantado el novio

Jaja, aquí las rubias están muy buscadas (las naturales, claro), pero tienen muy mala fama, sobre todo de tontas (yo también era rubia de jovencita, ahora soy castaña, y nunca he sido tonta... creo )
