According to this source, enredos. According to other sources, it's also said palitos de queso, queso de hebra, queso oaxaca (also known as quesillo), and queso cuerda. There may be other ways to say it.

What do you mean, English has words for everything? 1) English does not, it loans thousands, if not tens or hundreds of thousands from other languages. 2) Err, other languages have lots of words too =D.
Apparently not, because "string cheese" requires two words in English, while Spanish, according to Rusty, only requires one.

I agree with Rusty: "queso de hebra"/"queso Oaxaca"/"quesillo" has a similar consistency to "string cheese".

Then the correct translation for string cheese is queso oaxaca or queso de hebra.
Then I can say this at English as a source for my own learning. Today I will buy a piece to string cheese in the store, but really I don't know how many pieces wants my mother. After my mother this morning told me that she will needs three piece to string cheese but I'm not sure of the she said before about it. Then I don't know that I can do it if I must to buy the three pieces of string cheese or only I should to buy a pizza. What I should to do it? I'd like to know if the word Queso oaxaca and Queso manchego is translated of the same way.

All I can really speak for is Mexico and the United States, but cultural information and expectations come into play. If you say "string cheese" in the US, you're pretty much expecting a little shrink-wrapped stick of white cheese a big as your thumb and about 5 inches long. If you ask for Queso Oaxaca or queso de hebra in Mexico, you will be given a ball of white cheese that is actually a long string of cheese about as big around as your thumb and wrapped up in a ball. It has a similar texture and stringiness as US string cheese, but with a different flavor in my opinion.
