Estoy acostumbrado al español que se habla en México, y en mi opinión, la frase con el artículo suena mejor.
Otra opción: Llevo 2 años aprendiendo a tocar la guitarra.

Aprendiendo guitarra here. The other one sounds like aprehendiendo la guitarra to me. This is because "la guitarra" is the instrument and guitarra is a generic way to denominate "el arte de tocarla".
Aprendo guitarra, aprendo violín, aprendo piano.

I agree with Alec. I'd also say "aprendiendo guitarra"; but if it were "tocando", "la guitarra" would be my first choice.
