Eggs, eggs and eggs- huevos too

I was asked a question about eggs today, and so I thought it was about time we built the definitive list of eggs and egg dishes and ways to prepare eggs along with the translation in Spanish. I'll get started.

egg white The clear part of the egg, that turns white when cooked.
claro La parte blanca o transparente del huevo.

yolk, egg yolk The yellow part in the center of the egg.
yema La parte amarilla del huevo.

hard-boiled egg An egg with the shell on, boiled in water until the egg white and yolk are cooked hard.
??? Un huevo se se hierva en su cáscara hasta que esté duro por dentro (claro y yema).

Eggs over easy A whole egg is cooked on a griddle or in a frying pan. The yolk stays intact and is centered in the white. The egg is cooked on one side, and slightly cooked on the other side.
??? Un huevo entero se cocina en una sartén. La yema no se rompe y está centrada en el claro. Se cocina bien de un lado, se voltea y se cocina un poco del otro lado.

Eggs over hard Same as 'eggs over easy' except the egg is cooked well-done on both sides.
??? Igual a 'eggs over easy' pero el huevo se cocina bien de los dos lados.

Scrambled eggs One or more eggs are broken into a dish and mixed with a little milk, salt, cream etc and then cooked in a pan, being mixed and chopped up while they are cooking.
Huevos revueltos Se rompen huevos en un tazón y se le agrega leche, crema, sal etc, y se cocina en una sartén, revolviendo el huevo mientras se cocina.

Poached eggs A whole egg, out of the shell, is boiled in water.
??? Un huevo entero, sin la cáscara, se cocina en agua hervida.

Sunny side up eggs An egg is fried in a pan without breaking the yolk. The egg is only cooked on one side.
??? Un huevo se cocina en una sartén sin que se rompa la yema. Sólo se cocina de un lado.

Omelette Scrambled eggs made to form a round flat layer and wrapped around: potatoes, cheese, ham, and/or other ingredients.
Omelette (en México), Tortilla (en España ?) ??

Deviled eggs The egg is hard-boiled in the shell, then it is cut in half, the yolk removed and mixed with mayonnaise, salt, pepper, and mustard etc and returned to the center of each of the egg white halves.
Huevos rellenos??? El huevo en su cáscara se hierve en agua y luego se parte a la mitad, se le saca la yema, la cual se mescla con mayonesa, sal, pimienta, mostaza etc, y después se rellena las mitades del claro cocido con el relleno de yema.

Huevos fritos:
Ahora en español, porque este tema es muy complicado:
En España "fried egg" es "huevo frito",normalmente con la yema sólida, pero también se le llama huevo frito si está muy hecho, poco hecho, con la yema líquida, con la yema sólida, con puntillas, etc.. Hay gente que los llama también huevos "estrellados", pero para los cocineros/puristas los "huevos estrellados" es la receta que mando abajo (se hacen los huevos fritos y luego se "estrellan", se rompen sobre las patatas).

Huevos pasados por agua: Calentar agua en un cazo, cuando rompe a hervir se agregan los huevos cuidadosamente dejánndolos cocer 3 minutos.
Huevos estrellados:Pelar las patatas y se cortan para freír, En una sartén se deja que se caliente el aceite para freír las patatas, Freír las patatas y sacarlas reservándolas, freír los huevos con poco aceite, la yema no debe estar muy hecha. Inmediatamente se ponen los huevos sobre las patatas fritas y se revuelven con estas. Es decir hay que "estrellar" los huevos con las patatas (añadir jamón a voluntad).

otras recetas: huevos cuajados, empanados, "mollets" ó cristal, moldeado, a la plancha (griddled/grilled egg), horneados (baked), huevos con magras,.....

Aquí los huevos se hacen en sartén con aceite de oliva, por lo que normalmente siempre están bastante hechos (similar al over medium)
en plancha, según te entiendo, puedes darles al vuelta a tres niveles: over-easy, over-medium and over-hard (Se podría decir poco hecho, normal, muy hecho) o dejarlos medio crudos (sunny side up, sería como huevo frito con la yema sin hacer)
Me parece que son términos de Estados unidos.
