Are all of the expressions below correct?

muchos jóvenes españoles
muchos españoles jóvenes

muchas personas jóvenes y españolas
muchas personas españolas y jóvenes

mucha gente joven de España
mucha gente joven y española
mucha gente española y joven

If you use "y", you're emphasizing the next adjective. It should only be used when it's very important that apart from being Spanish, they're young or vice-versa. Probably, if you had a list of three or more adjectives, the "y" wouldn't change much the emphases.

You must choose one or the other, depending on whom you want your subject to be.
