So, Rusty, just to be clear.... What I said with the "de" ("Soy de China.") means "I am from China." And without the "de", ("Soy chino.") means "I'm Chinese." Right?

Yes, if you can use the word Soy at Spanish, you need to write Soy china, but you must remind the sex or gender, for example if you are girl then obviously you need to be more specific when you are referring to other person or also apply for yourself, then my example could to help you. Soy China, Soy una amiga mas de gerardo, then in this examples, I'm applying the gender of the person in sex male.

To be careful when you write pronoun in first, second, and third person.
