por ejemplo, en la casa del amigo

¿Qué quisieras/deseas comer?/¿Quisieras/deseas comer X o Y?=What would you like to eat?/Would you like to eat X or Y?

en un restaurante
-¿Qué le gustaría tomar/desea tomar/quiere tomar/quisiera tomar/quería tomar
-Quería/me gustaría/deseo tomar/quiero tomar/quisiera tomar...

In some countries is "quisiera(s)" in a question or a statement not widely used?

¿Pudiera sentarme (por) allá?=¿Podría sentarme por allá?=Could I sit over there?
Does anyone know if these are only the same in Latin America or if they are also equivalents in parts of Spain?

Todo correcto. Except that "Pudiera sentarme" is very formal and usually is used when going to a places where you have to be seated and you are asking to be seated somewhere of your preference...at least in Chile.

It shows deference. In Chile people demand to be treated formally unless you are friend, and as such you have to address people in the "que quisiera (usted) tomar" form...
