Is this an appropriate place to use "convertir" or is there a better word?
Is "espacio" an appropriate word, or is there something better?

"Hay espacio desocupado en el edificio. La empresa lo esta convertiendo a oficinas."

En el edificio hay (espacio/superficie) (sin uso/disponible)

La empresa lo está convirtiendo/transformando en oficinas.
La empresa lo está remodelando/terminando para hacer (nuevas/más) oficinas.

remodelando --> they were finished rooms used for other purposes
terminando ---> they were bare spaces or an unfinished construction.

You can use "convertir en", but Alec's suggestions are a bit more natural.
