"Fire drill" is a countable noun in English.
To my ear, "conduct/have/hold fire drills" are all good. However, if "we conduct/hold fire drills", then "we" tends to focus more on the people who control when fire drills happen. On the other hand, if "we have fire drills", then "we" can be anyone who is part of the school community and participates in them without regard to whether they control when fire drills happen. |

Withnail wrote this a bit haphazardly.
It is common to hear: we are having a practice fire drill today. Personally I think the term practice fire drill is redundant. The term fire drill is sufficient.
