Minding the placement of the apostrophe, Día del Padre is Father's Day while Día de los Padres is Fathers' Day, right? Which is more commonly used? I'd vote for the second, so as to include all fathers.
Same thing for Mother's Day/Mothers' Day, ladies!

Father's Day is the official name of the holiday in English.
Fathers' Day was the originally-submitted name, but Father's Day was already in use and that name stuck.
The singular form is also the more commonly-used Spanish name for the holiday.

The celebration is for all fathers, one at a time.

It's interesting in English.
I started thinking, but those names don't seem to follow a rule in Mexico:

- "Día de las madres", but very seldom "de la Madre" (maybe because because of the possible interpretation as a bad word.)
- "Día del niño", but never "de los niños".
- "Día del padre", but never "de los padres".
- "Día del compadre", but not "de los compadres".
- "Día de los novios/enamorados" (but not "del enamorado", I guess because it must include a couple) / "Día del amor y la amistad" / "Día de San Valentín"
- "Día del abuelo", but not "de los abuelos".
- "Día de la familia", but not "de las familias".
- "Día internacional de la mujer", but very seldom "de las mujeres".

In Spain, it's St Joseph's Day (19th March), which happens to also be the major annual festival in Valencia. There are street paella competitions, lots (and I mean lots - we're talking hundreds of tonnes) of fireworks, and burning of effigies.

Donde vivo yo, el día de San José compite con el día de San Patricio pero San Patricio siempre gana con su gran desfile y fiestas y el color verde que se lleva no solo los irlandeses. El morado característica de San Jose se pierde. Sin embargo en pastelrías italianas preparan sfingi di San Giuseppe, unos zéppoles rellenos de crema. No te mata se lo come una vez en el año.
