Can we omit the ‘s’ in ‘deportes’?
• Me gustaría saber qué clase de deportes se practican.
• Me gustaría saber qué tipo de deporte se practica.

Yes, but it seems to me they express different things. In the first sentence you're assuming there are many different kinds of sports practiced there, and in the second you expect an answer involving only one activity.
