where would your level of english be without your english classes from your school?

donde seria/estaria tu nivel de ingles sin tus clases de ingles de tu escuela?

i keep thinking estaria is the correct pick

Estaría is the correct pick, but I would use other wording.

One suggestion:
¿A qué nivel de inglés podrías llegar sin tomar clases en la escuela?

Well, I answer your questions, never I have gone to school to learn English, and I suppose that my English today is more or less good altought, now I need to learn to Speak the language, as I wish it.

Your English is pretty good here.

Some suggestions to improve the sentences you wrote:

No solemos usar palabras tales como pues, de verdad, etc. para abrir una frase. Por ejemplo:
Well, I'll answer your questions.

El adverbio nunca se coloca en frente del verbo principal en un verbo compuesto.
Por ejemplo:
I've never gone to school to learn English, and I suppose my English is more or less good.

Now, though, (instead of Although) I need to speak the language like/as I want/desire (to).

As I wish it is understandable, and is a transliteration of como lo deseo, but it wouldn't be as commonly used as the phrase I supplied.
