Here in Spain you have Concha and Conchita (pet names for Consuelo?), but the name is not very fashionable nowadays. Is it just a wrong impression I got from watching too many episodes of Without a Trace or is the name more common in Mexico...?

I've met more than one señora en México que se llama Conchita (short for Consuelo).

Concha is still a common name, but no more for youngsters.
I was with Poli ("pescatero") because I didn't know this "concha"-bread thing
