Ministry of Foreign Office or Foreign Affairs? Is it correct if I omit the word "Ministry"?

No, that would be incorrect, because office is used as a synonym for ministry in this case.

@Crotalito: Cuando se trata del Ministerio de Asuntos Exteriores (el equivalente de la Secretaría de Relaciones Exteriores mexicana), la traducción de "Asuntos"/"Relaciones" es "affairs". "Business" se entiende más como "negocios".
"Exterior", en inglés no es suficientemente claro con respecto a las relaciones con países extranjeros, así que se prefiere la palabra "foreign".
