it's been a while but, what do these mean and how are they used, este esta y esto y tambien eso y esa? gracias, mucho!

Two words, singular in form, with three genders (masculine, feminine, neuter).
este, esta, esto = this (referring to a singular object) ese, esa, eso = that (referring to a singular object) The plural forms are: estos, estas, estos = these (plural object) esos, esas, esos = those (plural object) |

Sorry, but "esto" and "eso" haven't plural form, since they are neutral forms (without gender and number).

The new topic has nothing to do with the determiners, but yes, you would use 'es' and 'son' in those sentences.
As irmamar pointed out, there is no plural form of esto or eso. So, the plurals for este, esta, ese and esa are still valid. (Just the second occurrence of estos and esos is invalid). este cuaderno estos cuadernos esta casa estas casas ese cuaderno esos cuadernos esa casa esas casas |

If there is no plural form for esto or eso, how come they look plural in your list?

Those are the plural forms of este and ese, respectively.
