is coconut gel still used or just the term?

I know nata as cream, from milk. That's what I see as the translation in every Spanish-English dictionary.

I found the phrase 'nata de coco' here (http://en.wikipedia.org/wiki/Nata_de_coco). It describes a jelly-like food made from fermented coconut water, common in East and South Asia. The Spanish word for cream was borrowed.

Cream is used to make pastel de nata, not fermented coconut water.

Nata is a term not used in all Spanish-speaking countries. Crema batida is used when referring to whipped crème. Nata in Puerto Rico is the skin-like matter that forms when milk is heated too quickly.
