In the above paragraph, is the word ‘con’ necessary? Is the sentence grammatically incorrect if we leave it out?
The first sentence also sounds a little off to me. Is it missing something?
Many thanks in advance.

The usage of 'con' is correct with 'soñar'.

soñar con = to dream about

I agree with Rusty. I will just add that "soñar con algo" is to wish that something will come true, and "soñar algo" means to have dreamt something while sleeping.

Thanks so much, guys. If 'con' is left out, is it grammatically incorrect?

If you meant 'wishing for something to come true', yes.
