Literally, it comes from the verb volar = to fly. So volado is flied, the past participle. But in this case it's a slang usage that has another meaning as explained by Planet Hopper.

volado (from volar - to fly) = flown

I'm not familiar with the expression ser un volado that PH posted, but note that it is an expression and the literal meaning 'flown' doesn't figure in the English translation of the expression.

In the Caribbean volado (volao) also means rice that's cooked gringo style. This means undercooked by Latin standards with grains that don't stick together.

El sentido que menciona poli se refiere a que el arroz se voltea muy alto para no freirlo mucho. Puede ser arroz volteado? Hacer eso es muy asiatico, y ahora se que tambien americano :-)

Hay un gesto en España que tiene que ver con esto, al menos a mi me da la impresion: cuando quieres decir que alguien esta volado (his/her mind is blown up) you put your index on the temple and spin it.

No definitely not puffed rice. What Carribeans mean by arroz volado us
rice that clearly maintains is full grain. Rice that is not starchy or gooey. It's esthetically appealing, but it usually doesn't taste as good. Americans usually like rice prepared this way(including paella cooked this way:eek:).

As far as I know cooks from other cultures prefer rice to be a bit more starchy.

Arroz entero, definitely. Here it is used in salads and in paellas, too.

Rice for stews and for dessert (with milk and cinammon) would be starchy.
