I have the following sentence:

"Durante el tiempo de cosecha, la familia Acosta llama a otras personas para trabajar en la finca, y así juntos poder terminar el trabajo a tiempo para tener buen café."


I feel like it would make more sense to say "y así que juntos pueden terminar", and can't figure out why it's written the way it is.

It makes sense the way it is written. The only verb in the sentence is llama, whereas trabajar, poder terminar, and tener are infinitives. In English, you'll also use infinitives to convey the same idea.

During harvest time, the Acosta family calls other people to work on the farm, and thus combined (together) be able to finish the job in time to have good coffee.

I think it'll be a bit easier to understand if the "together" clause is removed.
