I would appreciate it if you could clear up the following point for me:

The Complete Spanish STEP-BY-STEP by Barbara Bregstein contains a reading comprehension text (unit 13, p. 231) about a woman who is called Isabel. In the text she travels to Italy where she meets some friends and she is happy about this opportunity to enjoy social interraction.

One of the questions to the text goes like that:

¿Que parte de su viaje le gusta más a Isabel?

I would translate it as “What part of her trip does Isabel like more?” but I am confused by the absence of the accent in the word “que”. Is “que” an interrogative adjective as in “¿Qúe día es hoy?” or is it a relative pronoun/conjunctive word?

I would respond as “La parte de su viaje que a Isabel le gusta más es estar con amigos”

Your clarification is most appreciated.

The question in question certainly begins with an interrogative, which should have been spelled «Qué». At least it has the opening interrogation mark.
Your response to the question lacks a period, but is otherwise perfect.

Así estaría bien.
