I would use "highly strung" rather than "high-strung".
The person who used this word was South African, in fact. :)
But I think this may be a distriction between AmEn and BrEn?
According to the Cambridge Dictionary at least:
Definition
highly-strung Show phonetics (http://forums.tomisimo.org/define.asp?dict=CALD&key=37035&ph=on)
adjective (US high-strung)
very nervous and easily upset:
a highly-strung young woman
a highly-strung racehorse
