Two questions about ceviche

I just tasted ceviche for the first time today, we had a potluck day in class and the TA brought ceviche. It was pretty good, but I didn't get a chance to ask her about it. So, what does the word ceviche mean and how do you say it in English, and also, what are all the ingrediants in ceviche, and how do you make it. Can you tell i really liked id? :)
