Las palabras que deben estar de acuerdo con los nombres

Hola ¿qué son las partes de la oración que deben estar de acuerdo con los nombres en número y género?

1. Sé que los adjetivos , pero es fácil :)

2. y los artículos como la, el , los , las.

3. Pero hay palabras como "muchos / muchas" y "demasiado / demasiada" que están de acuerdo con el nombre.

Muchísimas gracias Rusty, ¿me puedes dar un ejemplo de eso porque a veces me pregunto si debo usarlo así? (mucho como un adverbio) :)
