The verb "freír" (and another ones, such as imprimir, proveer, atender, etc.) has two participles, one of them regular ("freído") and the other irregular ("frito"). With the verbs freír, imprimir and proveer you can use both participles with compound tenses (not with tho others, around 70 verbs):

frito. Ambos se utilizan indistintamente en la formación de los tiempos compuestos (
he freído/
he frito) y de la pasiva perifrástica (
es freído/
es frito), aunque hoy es mucho más frecuente el empleo de la forma irregular:
«Le he frito también un par de huevos» (Olmo
Iglesias [Esp. 1984]);
«Aparte se habrá freído el tomate [...]
con cebolla, todo muy despacio y removiendo bien» (Toharia
Setas [Esp. 1985]). En función adjetiva, sin embargo, solo se usa la forma
frito, que puede ser también un sustantivo (‘alimento frito’):
«Un bar en el que hacen unas sardinitas fritas que te mueres» (Zarraluki
Silencio [Esp. 1994]);
«Evitar en lo posible los fritos» (Pirolo/Pirolo
Dietas [Arg. 1990]).
